1 cup
butter or margarine, softened
1 cup
granulated sugar
2 eggs

teaspoons vanilla extract
3 cups
all-purpose flour

teaspoon baking powder
½
teaspoon salt
In a large bowl with an electric mixer, beat butter and sugar
until creamy. With mixer on low, add eggs and vanilla, until just blended. In a
separate bowl, mix flour, baking powder and salt. Add to butter mixture, mixing
until well blended.

Divide dough in half, and shape each section into a disk.
Wrap each disk in plastic wrap, and chill 1 to 2 hours or until firm enough to
handle.

Preheat oven to 400F. On a lightly floured surface, roll each
half of chilled dough to ¼ inch thick. Cut into shapes with 2 ½-inch cookie
cutters. Place on ungreased cookie sheet.
I made the cookies a little thinner than they were supposed to be and got a lot more of them that the recipe said I would. FYI, there's that. |
Bake 6 to 8 minutes or until edges
are firm and bottoms lightly browned. Remove cookies to wire rack to cool
completely. Decorate as desired.
