package (8.8 ounces) homestyle penne pasta

tablespoons butter

tablespoons all-purpose flour
2 cups
whole milk
¼ cup
grated Parmesan cheese
Juice
and zest of 1 lemon

tablespoons fresh parsley, chopped
1
teaspoon fresh rosemary, stemmed and chopped
½ teaspoon
fresh thyme leaves
2 cups packed
baby spinach leaves
Prepare pasta according to package directions. In a large
skillet, melt butter over medium heat. Add flour and stir until mixed well with
butter. Continue to cook and stir for 1 minute. Do not brown. Gradually add
milk, stirring constantly, until mixture is smooth. Stir in parsley, rosemary,
and thyme. Simmer, stirring frequently, until sauce begins to thicken, about 3
minutes.
Add Parmesan, lemon juice and zest. Add pasta and spinach. Cook and
stir until spinach wilts and all ingredients are well coated.
My Rating: 4/5 "Citrus is always a great flavoring! The combination of lemon and spinach here is really on-point. The sauce is a little gloopy, but it tastes good and that's what matters. Easy to prepare and easy to eat!"
