¾ cups 2% milk, divided

cup long grain white rice

tablespoon olive oil

pound boneless, skinless chicken breasts, cut into 1-inch pieces

(16 ounce) package frozen broccoli cuts
½
(32 ounce) loaf processed cheese spread, cubed

tablespoons butter
In large saucepan, prepare rice according to package
directions using 1 cup milk to 1 cup water.
Meanwhile, in large skillet, heat oil over medium-high
heat. Add chicken; salt and pepper to taste. Saute until cooked through and
slightly browned.
Add broccoli and continue sautéing until heated
through; transfer to saucepan with cooked rice.
Bite-sized pieces of chicken are super-satisfying to eat. I don't know why, but they are. |
Add in remaining milk, cheese,
and butter. Cook, stirring frequently, until cheese is melted and heated
through.
Say cheese! (Because saying "Velveeta" doesn't really do the trick, does it?) |
