3 lbs. Brussels sprouts, trimmed and halved
¼ cup olive oil
8 garlic cloves, minced
1 tsp. salt
½ tsp. pepper
1 pkg. (5.3 oz.) fresh goat cheese,
crumbled

I ended up halving the recipe when I realized that this was only 1.5 lbs. of sprouts and I didn't know what I would do with all 3 lbs.
Preheat oven to 425F. Mix first five ingredients; spread in a greased 15x10x1-in. pan. Roast until tender, 20-25 minutes, stirring occasionally.

Transfer to a bowl; toss with cheese.

My Rating: 5/5 "I adored this. So did my partner. It's amazing because it actually calls for enough garlic (which is to say, tons) and because goat cheese is the best. Putting all of these flavors together is culinary genius. Make it, because veggies should be delicous!"
