Kellogg’s and Nash Finch Ideal Meal

toaster waffles, toasted

cup shredded low fat Swiss cheese
6
strips turkey bacon, cooked & crumbled to ½ cup
½ cup
egg substitute [2 eggs]
½ cup
low fat plain yogurt
2
tablespoons sliced green onions
¼ teaspoon
salt
¼ teaspoon
garlic powder
¼ teaspoon
pepper
Behold the Eggo waffle in all its mass-produced majesty. |
Place waffles on foil-lined tray coated with cooking
spray. Sprinkle each waffle with cheese and bacon. Combine remaining
ingredients and spread evenly over each waffle.
I shredded more cheese than I needed, so what you see here is about 1.5 cups instead of 1 cup. As cooking mistakes go, that was a pretty ok one to make. |
Bake at 350F for 25 minutes or until set and lightly
browned. Serve hot.

My Rating: 4/5 "Big fan of this. The smoky turkey bacon combines well with the comforting Swiss, and green onions are always a great counterpoint to cheesy things. It'd probably be tons better with homemade waffles instead of Eggos, but that said the Eggos are super quick to toast and that's a huge plus. Fun stuff!"
