2 slices ham, 1-inch thick
2 bananas, peeled and sliced
3 oz. brown sugar
4 tablespoons coconut, freshly grated
4 tablespoons lime or lemon juice
1 oz. butter
Try dipping your bananas in a little lemon juice as you cut them so they don't go brown so fast. |
Halve ham slices and arrange in a shallow, greased
baking dish. Smother with banana, sprinkle with sugar, coconut and lime juice.
Dot liberally with butter and bake in a moderate oven (350F.—Gas Mark 4) for
25-30 minutes.

My Rating: 5/5 "Loved this. It's super-delicious. All of the sweetness - banana, coconut, and brown sugar - blend incredibly well with the ham flavor and get nicely absorbed into the meat. I really needed a flavor flavor vacation during my fall/winter transition and this dish did the trick!"
