2 cups oven roasted diced chicken breast
4 pita pocket bread rounds, cut into halves
1 bag leaf lettuce
1 red onion, sliced
4 tomatoes, sliced
1 cup plain yogurt
Combine chicken, onion, tomato and yogurt in medium
bowl.
As you can see, this has already gone off the rails. How are you supposed to mix that? And for the record, I used one tomato instead of four, and the stuff was still this bulky. |
Stuff each half of the pita bread with leaf lettuce and
chicken mixture.
And then you're supposed to somehow shove all of that mess into tiny pita pocket openings? |
Serving suggestion: Serve with a cup of chilled fresh
fruit or vegetable sticks.
I served mine with some nice cold resentment. |
My Rating: 2/5 "This is so weird. The recipe makes way to much stuff for the amount of pitas it calls for (and that's even after reducing the number of tomatoes it says to include). The stuff, then, is way to bulky to mix and to put into the pitas. And finally, to add insult to culinary injury, it mostly just tastes like red onions. Like, the onions are pretty overwhelming. I did like the chicken in the yogurt with the lettuce - that was tasty. Maybe y'all can riff on that without dumping in a bunch of unreasonably-sized vegetables."
