1 pkg. (6 oz.) strawberry flavor gelatin
2 env. (1/4 oz. each) unflavored gelatin
1 cup boiling water
½ cup canned sweetened condensed milk
4 cups mixed fresh berries (blueberries,
raspberries, chopped strawberries)
Raspberries from the bush in our backyard! |
Mix first 2 ingredients in medium bowl. Add boiling
water; stir 2 min. until completely dissolved. Stir in milk. Pour into
13x9-inch pan sprayed with cooking spray. Stir in berries.
Going in! (It looks the same when you take it out of the fridge later - just, you know, stiffer. |
Refrigerate 3 hours
or until firm. Cut into bars. Refrigerate any leftovers.
My Rating: 4/5 "I've never had anything quite like this. The fresh berries add a refreshing element to the more processed sugary sweetness of the Jello. The addition of sweetened condensed milk gives the Jello itself a firm, enjoyable texture. It takes a minute to wrap yourself around the idea of trying it, but if you do it's rewarding!"
