One 5-ounce (142-g) can chunk white tuna in
olive oil
2 tablespoons minced celery
2 tablespoons minced carrot
1 scallion, finely chopped
2 to 3 tablespoons mayonnaise, plus more if
needed
1 tablespoon Rooster Sauce, homemade or
store-bought
1 teaspoon fresh lime juice, or to taste
Salt
Lettuce leaves or 4 slices crusty bread
Put the tuna in a large bowl. Add the celery, carrot,
scallion, mayonnaise, hot sauce, and lime juice, season with salt, and stir
with a fork to combine, breaking up any large chunks of tuna as you go.

Taste
and adjust the consistency and seasonings, adding more mayonnaise, lime juice,
or salt as needed. Serve over lettuce as a salad or on bread to make
sandwiches.

My Rating: 4/5 "I was all about the flavor of this. The sauce is really wonderful. I would like some more variation in texture (one of my favorite things about tuna salad), which could probably be accomplished just by making the veggie chunks larger. But really do try this - it's a great modern spin on a classic dish."
