1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
½ cup red onion, diced
1 can (15.25 oz.) corn, drained
1 clove garlic, chopped
1 tsp cilantro
¼ cup olive oil
4 Tbsp red wine vinegar
1 tsp lime juice
Salt and pepper to taste
1 can (15 oz) black beans, drained and rinsed
Tortilla chips
In small bowl, combine peppers, onion, corn, garlic and
cilantro.

Add olive oil, vinegar, lime juice and salt and pepper
to taste.
It's a good fat! |
Add black beans and toss well.
So colorful and happy. |
Serve with tortilla chips.
You'd think the chips are extraneous to a salad, but they really go well with the veggie mixture. |
My Rating: 4/5 "This is really nice. The corn gives it a pleasant sweetness and the peppers give it some pizzazz. Eat it with the chips if you want to debate an almost-salsa-but-almost-real-food identity crisis."
