1 lb. ground beef
¾ cup water
1 can (11 oz.) Mexican-style corn, drained
1 packet (1.25 oz.) taco seasoning mix
1 cup thick & chunky medium salsa
1 package (12 count) yellow corn taco
shells, warmed
Brown beef; drain. Stir in water and seasoning mix.

Bring to a boil.
Reduce heat to low; cook, stirring occasionally, for 5
to 6 minutes or until mixture is thickened.
Stir in corn and salsa.

Fill taco shells with beef mixture. Top with lettuce,
tomato, cheese and taco sauce.

We just topped them with cheese. I'm not in a place right now to be spending extra money on all kinds of accessories for one dish. |
My Rating: 4/5 "The sweetness of the corn is a nice counterpoint to the spices in the taco mix. I haven't had hard-shell tacos in a long time and I had forgotten how satisfyingly crunchy they are. This makes a lot of food for a little money, which is a pretty sweet deal right now."
