1 (12 ounce) package tri-color rotini
1 (14 ounce) can artichoke heart quarters,
drained
1 (6 ounce) can pitted black olives,
drained
1 pint grape tomatoes
1 medium cucumber, seeded and chopped
1 cup chopped red onion
½ red bell pepper, chopped
½ yellow bell pepper, chopped
¾ cup Italian dressing

Prepare pasta according to package directions; rinse
with cold water and drain.
In large bowl, combine cooled pasta, artichoke hearts,
olives, tomatoes, cucumbers, onion and peppers; toss with dressing.
Choose a good Italian dressing for this - or make your own! |
Refrigerate, covered, several hours or overnight.

My Rating: 4/5 "Loved the variety of flavors here. Each vegetable brings its own kind of awesomeness to the overall appeal: the salty olives, the spicy peppers, the cool cucumbers. I'd make sure you get a robust dressing for this so you can maximize it's full flavor potential!"
