½ cup all-purpose flour
¾ cup quick oats
½ cup sweetened coconut flakes
½ cup chopped walnuts
½ tsp. ground cinnamon
½ cup butter
1 lb. apples (peeled, cored, and sliced)
¼ cup pure sugar
Rind of 1 lemon, grated

Toss the apples in a little lemon juice if you won't want them to turn brown. |
Preheat oven to 350F. Spray an 8-inch square baking
dish with non-stick cooking spray.
Sift the flour into a mixing bowl. Add the oats,
coconut, walnuts, and cinnamon; stir to combine.
Using a pastry blender or two knives, cut in the butter
until the mixture resembles coarse crumbles.

In a separate bowl, add apples, sugar, and grated lemon
rind and toss to combine.
Place apples into baking dish, and sprinkle dry topping evenly across the top.

Bake in 350F oven for about 20 minutes or until crumb
mixture is browned and fruit is hot and bubbly.

My Rating: 4/5 "This is a really good fruit crisp (and I do love a good fruit crisp). I think it's the lemon rind - it adds a wonderful accent to the crisp apples and the homey oatmeal. With just enough cinnamon and sugar to keep it interesting, this is a nice dessert for summer or for fall."
