Coconut Bars:
1 ½ cups unsweetened coconut flakes
¼ cup coconut oil, solid or melted
Pinch of cinnamon
1 tsp of vanilla extract
2 tbsp pure maple syrup or coconut nectar
¾ cup slivered almonds
Chocolate Dip Layer:
½ cup dairy free chocolate chips
1 tbsp of collagen powder
1 tsp coconut oil
Line an 8.5x4.5” loaf pan with parchment paper or wax
paper.
Add coconut flakes, coconut oil and maple syrup. Add
cinnamon/vanilla extract.

Spread coconut mixture into the prepared loaf pan.
Chocolate Dip Layer: Use the double boiler method to
melt chocolate, then add coconut oil and collagen.
Instead of spending $30 on a tub of collagen for just one recipe, I just used this drink mix that already went well with the flavors in the dish. |
Pour melted chocolate over pan, top with almonds and drizzle
more chocolate.
Yay almonds! |
Freeze for 15-20 minutes until hardened. Take out 5 minutes
before serving!
I cut mine into bars, but you could also just break off some chunks. It's a little hard to cut evenly, so don't expect perfection. |
