Fresh Lime Salsa

Mission

1 large ripe tomato, diced

8 medium-sized tomatillos (about 8 oz.), husked, rinsed, and chopped

¼ cup minced red bell pepper

½ tsp. minced onion

1 tsp. grated lime peel

1 Tbsp. lime juice

Tortilla strips

I am now officially a HUGE fan of tomatillos.

Mix all ingredients together in nonmetal bowl. 

It's a very festive presentation. :) 

If made ahead, cover and refrigerate up to four hours. Serve with tortilla strips.
