½ cup butter, softened
½ cup packed brown sugar
½ cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup pistachios
½ cup rolled oats
½ cup dried cranberries
½ cup white chocolate chips
If you can find those fancy pistachios that come pre-shelled, do yourself a huge favor and buy them. It takes so, so long to shell a whole half-cup of them. |
Preheat oven to 350F. Lightly grease cookie sheets or
line with parchment paper.
Combine butter, brown sugar, egg and vanilla in a large bowl; beat until light and fluffy. Mix in flour, baking soda and salt. Stir in pistachios, oats, cranberries, and chocolate chips.

Drop by rounded
tablespoonfuls onto cookie sheets.
Bake in upper third of oven for 12-14 minutes or until
lightly browned on edges. Use a spatula to remove from cookie sheets. Cool on
wire racks.
Nicely compact little balls of flavor. |
My Rating: 4/5 "These cookies are so cute and crunchy and fun! You'll love them if you enjoy combinations of sweet and salty; the pistachios and the chocolate are great together, and the cranberries add a nice tartness to the whole thing. It's reminiscent of trail mix - but it's cookies!"
