1 ½ cups quick-cooking rolled oats
1 ½ cups flour
½ cup packed brown sugar
¾ tsp. ground cinnamon or apple pie spice
1 tsp. baking powder
¾ tsp. baking soda
1 cup applesauce
½ cup milk
¼ cup vegetable oil
1 egg
Oatmeal Topping (see recipe below)
Preheat oven to 400F. Grease 12 muffin cups; set aside. In medium bowl stir together oatmeal, flour, sugar, cinnamon, baking powder and baking soda. In another bowl combine applesauce, milk, oil and egg; add to flour mixture.
It already smells good, and you haven't even baked anything yet! |
Stir just until moistened. Spoon batter into muffin cups, filling each ¾ full. Sprinkle each with Oatmeal Topping.
There isn't a ton of topping to go around, so be judicious. |
Bake for 20 to 25 minutes
or until a toothpick inserted in the center comes out clean.
Oatmeal Topping: Stir together ¼ cup quick-cooking
rolled oats, 1 tablespoon packed brown sugar, 1 tablespoon melted butter and
1/8 teaspoon ground cinnamon until crumbly.

My Rating: 4/5 "Loved the consistency of these, and they're nice and moist as well. They're pleasantly sweet without being diabetes-inducing. They've been making a nice little breakfast for me this week that I look forward to. I wish they were bigger, but the easy solution for that problem is just to eat two at a time!"
