8 oz ground turkey
1 small onion, chopped
2 tsp chili powder
½ cup red or green salsa
1 can (15 oz) whole kernel corn with
peppers, drained
6 (8-inch) flour tortillas, warmed
1-1/2 cups (6 oz) shredded 3 pepper cheese
Additional salsa, cilantro leaves, and
low-fat sour cream, if desired
In large skillet over medium-high heat, cook turkey and onion until turkey is no longer pink; drain.

Stir in seasoning, salsa, and corn. Cook 2 minutes or until heated through.
Sweet and savory! |
Spoon turkey mixture into warm
tortillas with cheese; fold over. Serve immediately with additional salsa,
cilantro leaves, and low-fat sour cream, if desired.

My Rating: 4/5 "These are some big ol' tacos, y'all - meaty and delicious. They're no less juicy for the fact that they're made with turkey, either. I could have handled more zing, but I think just adding more salsa than I did might have helped."
