1 cup chopped onion
¼ cup butter
4 cups diced raw potato
2 tsp salt
½ tsp. coarsely ground black pepper
2 cups water
1 lb. frozen cod, partially thawed, cut in cubes
1 17-oz. can whole kernel corn, undrained
1 13-oz. can evaporated milk
In a large kettle, saute onion in butter. Add potato, seasonings, and water. Cover and simmer 15 minutes.

Put cod on top of potatoes. Cover and simmer an additional 15 minutes. Stir in undrained corn and evaporated milk.

Cover and heat to just below the boiling point.

My Rating: 4/5 "This is really enjoyable. It's substantial, creamy, and just sweet enough to be interesting. I even fed some to my partner, who absolutely hates fish, and he thought it was pretty darn good too. Good for Norway!"
