1 tablespoon olive oil
1 small onion, diced
1 carrot, diced
1 stalk celery, diced
2 cups long-grain white rice
1 small red bell pepper diced
1 clove garlic, minced
½ teaspoon dried Italian seasoning
3 cups vegetable broth
1 small zucchini, diced
½ cup Italian parsley, chopped
In a large sauce pan with a lid, heat olive oil over medium heat and cook the onion, carrot, and celery until slightly softened, about 3-4 minutes.

Add the rice and cook while stirring constantly an additional 3 minutes. Add the bell pepper and garlic and cook two minutes more. Increase heat to high and add the Italian seasoning, vegetable broth and zucchini and bring to a boil. Lower heat, cover and allow to simmer for 15 minutes over low heat.

Turn off the stove and let sit for an additional 10
minutes. Fluff with a fork and serve with the chopped parsley.

My Rating: 3/5 "It's healthy and filling, so win there. If you want a nice, inoffensive side dish this has you covered. On its own merits you might want to tinker with it to see if you can give it a bit more flavor."
