1 whole chicken, cut into quarters
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
2 tablespoons Cajun seasoning
2 tablespoons parsley flakes
1 teaspoon salt
½ teaspoon black pepper
1 stick butter
Preheat oven to 350 degrees.
Place the chicken, Worcestershire sauce, mustard, Cajun seasoning, parsley, salt, and pepper into a large bowl and toss to coat the chicken well.
This is a hell of a spice blend. |
Place chicken into a 9 x 13-inch pan. Cut the butter into thin strips and spread over your chicken.
So much delicious butter. |
Bake uncovered for 1 hour and 40 minutes, or until
chicken is tender and golden on top.
Best served with creamed potatoes and small sweet peas.
Or! Or! with some asparagus and a salad. |
My Rating: 4/5 "Probably the best rub I've ever put on meat. Get a good-quality Cajun seasoning to make this really pop. The chicken breasts came out a little dry, but the wings and legs were juicy and delcious. (I think that was in part because I cooked the breasts without the skin.) All in all, a memorable approach to poultry."
