1 cup quinoa, rinsed
1 (5 ounce) package sweetened dried
cranberries
4 teaspoons curry powder, divided
¼ cup plain nonfat Greek yogurt
1 tablespoon extra virgin olive oil
1 tablespoon fresh squeezed lemon juice
1 ½ teaspoons honey
1 large crisp apple, diced
½ cup diced red onion
½ cup walnut halves and pieces, toasted
½ cup reduced fat feta cheese crumbles
2 tablespoons chopped flat Italian leaf

In medium saucepan with cover, prepare quinoa according
to package directions adding cranberries and 3 teaspoons curry powder with quinoa.
Cool completely.
In large mixing bowl, combine yogurt, oil, lemon juice,
honey and remaining 1 teaspoon curry powder; salt and pepper to taste.
Add cooled quinoa and remaining ingredients to yogurt
mixture. Toss until well combined; salt and pepper to taste.

My Rating: 4/5 "Wonderful, wonderful stuff. Having so many different add-ins keeps the dish complex and interesting both in terms of flavor and texture. It makes you feel healthy, too! There might be a TITCH too much curry powder in there, but that's a minor quibble about an otherwise amazing dish!"
