1 pkg Red Lentil Fusilli
2 Cups Onion, Red
3 Tbsp. Butter
1 Tbsp. Garlic
1 Tbsp. Ginger
1 Cup Water
3 ½ Cups Tomato, Crushed
½ Cup Greek Yogurt, Plain
2 tsp. Honey
4 tsp. Salt
½ tsp. Black Pepper
**Garnish with additional Yogurt, Black
Pepper and Coriander (Cilantro) leaves, to taste
Cook entire box of pasta according to package
directions.
Dice onion and saute in butter (5-8 minutes).
So much red onion, but fortunately its flavor doesn't dominate the dish. |
Mince garlic and ginger, add to onion when the onion
starts to take on color.
Deglaze the pan with water, bring to a simmer and add
tomato.
Add the yogurt, honey, salt, and black pepper.

Toss pasta with half the sauce.
Add more sauce on top of pasta.
Garnish and enjoy!**

My Rating: 4/5 "The sauce is unique - the flavor of the ginger shines through in a really nice way. What really makes this, though, is the cilantro. It's not just a garnish! Use a few leaves and enjoy the coutnerpoint it adds to the flavor of the sauce."
