1 pound butternut squash, peeled and diced
Salt and black pepper
6 bone-in chicken thighs
1 tablespoon honey
Preheat oven to 375F. Spray baking sheet and wire rack
with nonstick cooking spray.
Spread squash on prepared baking sheet; season with
salt and pepper.

Place wire rack over squash; place chicken on rack.
Season with salt and pepper. 
Roast 25 minutes. Carefully lift rack and stir squash. Brush honey over chicken.

Roast 20 minutes or until chicken is cooked through
(165F).

My Rating: 3/5 "This is nice, although I can't say it packs any fireworks. The chicken is nice and moist and the squash has a nice consistency as well. Neither of them are especially flavorful. In the end it just checks the box of being a nice healthy little dinner."
