1 tablespoon cornstarch
½ cup water
2 tablespoons soy sauce
2 teaspoons chopped fresh ginger
1 garlic clove, minced
¼ teaspoon hot pepper sauce
2 whole chicken breasts, skinned and boned
3 tablespoons peanut oil
1/3 cup shelled peanuts
2 medium peaches, peeled, pitted and sliced
¼ cup chopped fresh parsley

Combine cornstarch, water, soy sauce, ginger, garlic and hot pepper sauce in small bowl; set aside. Cut chicken into bite-size pieces. Heat oil in wok or large skillet. Add chicken; stir-fry over high heat 2 minutes or until tender. Reduce heat to medium-high. Add soy sauce mixture, peanuts and peaches. Stir-fry until thoroughly heated.

Stir in parsley.
Served on top of one of those chickpea/rice steamer things from the freezer section. |
My Rating: 4/5 "Sweet and healthy is a good combination. I enjoyed the variety of textures going on here. It is not spicy by literally any definition of the word, but maybe if you get one of those super souped-up hot sauces it could be? Regardless, it's a treat."
