2 cups enriched bran flakes cereal
1 cup milk
½ cup mashed ripe bananas (about 1 banana)
¼ cup vegetable oil
1 egg, beaten
¼ cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
Preheat oven to 400F.
In a medium bowl, combine the bran flakes and milk; let
stand for 5 minutes.

Add mashed banana, oil, and egg to the cereal mixture;
mix well.
In large bowl, stir together sugar [?], flour, baking
powder, salt, and cinnamon.
Make a well in the center of the bowl with dry
ingredients; add banana/cereal liquid mixture, stirring until just moistened.
Spoon batter into greased muffin pans, filling 2/3
full.
These don't rise a lot, so this is about how tall they're going to get. |
Bake at 400F for 25-30 minutes until golden brown.

My Rating: 3/5 "These were refreshing for not being packed with sugar. (Although I gather there may originally have been sugar in the ingredient list.) Our toddler loved them, which was nice since they're decently healthy. I just wished they had risen more, and I wished they had some spiced to add some pizzazz even without sugar."
