1 pkg. yellow cake mix
3 large eggs
1/3 cup vegetable oil
1 1/3 cups water
1 tsp. cinnamon
1 (21 oz.) can of apple pie filling
1 can frosting starter
1 packet cinnamon roll frosting flavor mix
Ground cinnamon (for garnish)
Preheat oven to 350F. Place cupcake liners in muffin
pans.
Prepare cake batter as directed on package. Add 1
teaspoon cinnamon and mix well.
Pour batter into cupcake liners, filling them no more
than two-thirds full.
Place 1 to 2 slices of apple from the pie filling on
top of each filled cupcake liner.

Bake for 18 to 21 minutes or until toothpick inserted
into cupcakes comes out clean.

But the cupcake just swallows up the apple! |
Let cupcakes cool for 5 minutes, then remove from pans
to finish cooking. Pour frosting flavor mix into can of frosting starter. Stir
until evenly blended.

So I don't think Duncan Hines makes the frosting starter stuff anymore. I just grabbed a tub of the regular white stuff because I figured that's the kind of thing that goes on a cinnamon roll. |
Frost cupcakes with the cinnamon roll frosting you just
created and garnish with a sprinkle of cinnamon.

My Rating: 4/5 "Simple concept but tasty results. The apple is surprising if you don't know it's there, so you should warn people so they're not alarmed. But when you're expecting it the apple is nice variety of texture and rounds out the nice sweet flavor!"
