Berry Walnut Crumble

BERRY MIXTURE:

2 tablespoons maple syrup

1 tablespoon lemon juice

1 teaspoon vanilla

1 tablespoon cornstarch

2 cups fresh blueberries (or frozen)

2 cups fresh blackberries (or frozen)

CRUMBLE:

1 cup rolled oats

1 cup finely chopped walnuts

1 cup almond flour

¼ teaspoon salt

½ cup maple syrup

¼ cup butter, melted

Now that's a beautiful berry combination.


Preheat oven to 350F. In a large bowl, mix together maple syrup, lemon juice, and vanilla. Add cornstarch and toss in the berries. Spoon mixture into a greased 8x8 inch pan. For the crumble mix together oats, walnuts, almond flour and salt. Stir in the syrup and butter until well combined. Spread on top of berries until they are mostly covered. 

It's good stuff - use it well.


Bake in oven for 40 – 45 minutes or until topping is golden brown. Let cool for 10 minutes before serving.

When this came out of the oven my toddler said it was "berry hot" without realizing they'd made a joke and it was awesome.

My Rating: 4/5 "Loved that this was pleasantly sweet without being an overwhelming sugar dump. The natural flavors were all well paired. Juicy and satisfying!"
