2 bananas, sliced
4 tablespoons maple syrup
1 teaspoon cinnamon, divided
4 large eggs
1 cup skim milk
1 teaspoon vanilla extract
4 teaspoons unsalted butter
8 slices multigrain bread
In a small bowl combine bananas and maple syrup; sprinkle with ½ teaspoon cinnamon, mix and set aside.

In medium bowl, combine eggs, milk, vanilla, and remaining cinnamon, whisk well. Heat 1 teaspoon of butter in a nonstick skillet or griddle over medium heat. Dunk two slices of bread into egg mixture and transfer to hot pan. Cook for 2-3 minutes per side until golden brown.

Repeat for remaining slices of bread, using an additional
teaspoon of butter for each batch. Transfer to a plate and top with banana
mixture.

My Rating: 4/5 "This is gonna sound weird, but it was actually kind of nice to eat French toast that wasn't slathered in maple syrup. The bananas are there to satisfy your sweet tooth, and other than that you just get to enjoy the eggy bread texture. It's healthier that way, too!"
