Lemon Cookies

Cooking with Coconut Flour, p. 80

4 eggs

1 cup sugar

1 ½ teaspoons lemon extract

¼ teaspoon salt

½ cup butter, melted

¼ cup sifted coconut flour

Combine eggs, sugar, lemon extract, salt, and butter and mix well. Stir in coconut flour. Let batter rest for 4-5 minutes to allow it to thicken slightly. 

It gets more dense as it sits.


Drop batter in spoon-size mounds 2 inches apart on greased cookie sheet. 

The batter is still a weird consistency, though.


Bake at 375 degrees F (190 C) for 15 minutes. Makes about 2 dozen cookies.

And then they come out with a little char halo.

My Rating: 3/5 "These taste really good, don't get me wrong. They're especially awesome right out of the oven. But I was annoyed because I was making them for a party and then when they consistently came out with the burned bottoms (even when I reduced the cooking time) I was a little embarrassed to bring them. So hooray for the taste but boo for the looks."
