Luther League Hot Dish

Lutheran Church Basement Women, p. 185

1 C. boiled macaroni

1 ½ C scalded milk

1 C soft bread crumbs

1 pimento, chopped

1 tsp chopped parsley

1 Tbsp chopped onion

1 tsp salt

3/8 tsp pepper

3/8 tsp paprika

1 ½ C grated cheese

3 eggs

I spent an embarassing amount of time staring at the grocery shredded cheese cooler trying to figure out which type seemed the most Lutheran. I settled on this.


Pour scalded milk over bread crumbs. Combine with the other ingredients, folding in well beaten eggs last. 

I used canned pimentos and probably included more than the recipe intended. 


Bake in a buttered casserole at 350 degrees F for 50 minutes. Most Luther Leaguers wouldn’t fuss if you served them hot dish because they’re used to it and learned at a young age not to complain.

Hot buttered corn seemed like an appropriate side dish for this.


My Rating: 3/5 "This is a neat recipe mostlly for the cultural moment it occupies. If you grew up with church potlucks you'll feel a pretty intense nostalgia trip. But it's also a little bland and a little too salty, so I wouldn't come to this with a taste for haute cuisine. It's home cookin.'"
