½ finely chopped white onion
2 jalapenos seeded and diced
6 ripe chopped tomatoes
2 tbsp lime juice
½ cup chopped cilantro
1 tsp salt
I decided to let the food chopper do the heavy lifting on this one. If the store is out of jalapenos (thanks, Walmart) then you can substitute 1/2 tsp of cayenne per jalapeno to get roughly the same amount of heat.
Stir tomatoes with onion, cilantro, jalapenos, lime
juice and salt.
Chill for at least 1 hour before serving. Adjust salt
to taste.
Served with a quesadilla and some chips! |
My Rating: 4/5 "This is so spicy and so refreshing at the same time. The cilantro makes a wonderful impact. Mine was a little soupy and I'm not sure if that's because I used the food chopper on the tomatoes or not. Either way, great flavor!"
