2 ½ tablespoons extra virgin olive oil
1 cup thinly sliced onions
3 tablespoons minced garlic
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
¾ cup chopped carrots
¾ cup frozen green peas
½ cup cashew halves and pieces
1 cup basmati white rice
2 1/3 cups water
1 teaspoon freshly ground sea salt
In a medium saucepan, heat oil over medium heat. Add onions and saute one minute. Stir in garlic, cinnamon, and cloves; add carrots, peas and cashews.
So many things at once! |
Saute 5 minutes.
Rinse and drain rice according to package directions.
Add rice to saucepan. Saute for 2 minutes.
Add water and salt; bring to a boil. Reduce heat; cover
and simmer 25 minutes.
Remove lid and gently stir; continue cooking for 5
minutes.
Served with some spicy eggplant from one of those Indian food pouches. |
