1 can (12 ounces) pink salmon, undrained
¼ cup minced green onions
1 egg, lightly beaten
1 tablespoon chopped fresh dill
1 clove garlic, minced
½ cup all-purpose flour
1 ½ teaspoons baking powder
1 ½ cups vegetable oil
Drain salmon well, reserving 2 tablespoons liquid.
Place salmon in medium bowl; brake apart with fork. Add reserved liquid, green
onions, egg, dill, and garlic; mix well.
Dried dill works in a pinch. |
Combine flour and baking powder in small bowl; add to
salmon mixture. Stir until well blended. Shape mixture into 6 patties.
Heat oil in large skillet to 350F. Add salmon patties; cook until golden brown on both sides.
So festive! |
Remove from oil; drain on paper towels.
Serve warm.
Served with tortilla chips, because do what you can with what you have. |
My Rating: 4/5 "The texture of these was great - nice and crisp on the outside and comforting in the middle. The flavor was fun as well. My only qualm was that while I couldn't feel the bones from the canned salmon in my first serving they got harder and annoying in the leftovers. So... gobble it all up, I guess!"
