12 oz medium egg noodles
2 Tbsp vegetable oil
1 pkg (16 oz) frozen pepper stir-fry blend
with sliced bell peppers and onions
1 pkg (14 oz) New Orleans style smoked
sausage or regular smoked sausage, sliced crosswise into pieces about ½-inch
thick
1 can (28 oz) crushed tomatoes
1 Tbsp Cajun seasoning
½ cup heavy whipping cream
Cook pasta according to package directions using a Dutch oven or large saucepan; drain in a colander and return pasta to Dutch oven. Heat oil in large skillet over medium-high heat. Cook vegetables until tender, about 5 to 8 minutes, stirring frequently. Add sausage to vegetables and cook for 3 to 4 minutes, stirring frequently. Stir tomatoes and Cajun seasoning into mixture.

Continue cooking over medium heat, stirring
occasionally, until heated through and simmering. Reduce heat to low and stir
in cream. Pour meat and vegetables over noodles and stir gently to blend.
So much going on, but in the end it's such a simple dish. |
My Rating: 5/5 "When I was putting the seasoning in I was like wow this might be too much. But it wasn't at all - it was exactly the right burst of flavor to set this apart from less robust or interesting pastas. The sausage was on point as well. If you like Louisiana flavor you'll adore this stuff."
