¼ pound bacon, chopped
½ cup chopped onion
½ teaspoon dried thyme leaves
1 (15.25 ounce) can whole kernel sweet
corn, undrained
1 (15 ounce) can sliced potatoes, drained
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes with
green chilies, undrained
1 (10 ¾ ounce) can condensed Cheddar cheese
soup
In large saucepan over medium heat, saute bacon until crisp; remove to paper towels.

Drain off excess drippings.
Add onions and thyme to pan; saute until onions are
softened (about 3-5 minutes).
Stir in remaining ingredients; bring to a boil. Reduce heat; simmer 10 minutes.

My Rating: 4/5 "I was ready to be Milennial-snotty about this because it's a bunch of canned vegetables. But they all go together well! And this is good! It has quite a kick to it (although take that with a grain of salt because I'm pregnant and for some reason that's making me more sensitive to spicy-heat than usual). That just makes it good for opening the sinuses during this flu season."
