¾ cup teriyaki marinade
2 tablespoons corn starch
1 pound beef for stir fry
2 tablespoons vegetable oil, divided
½ (16 ounce) package frozen broccoli
florets
½ red bell pepper, cubed
1 tablespoon chopped garlic
1 tablespoon chopped fresh gingerroot
Cooked rice

In medium bowl, combine teriyaki marinade and corn
starch; whisk until well combined. Add beef; toss to coat. Marinade 30 minutes.
In wok or large saute pan, heat 1 tablespoon oil over high heat. Add broccoli, peppers, garlic and ginger. Stir-fry 3-4 minutes or until peppers are softened.

Add 1-2 tablespoons water, if needed to steam
vegetables. Remove vegetables from pan; set aside.
Add remaining 1 tablespoon oil to wok. Add beef,
reserving marinade; stir-fry 2-3 minutes or until desired doneness.
Add vegetables and reserved marinade to wok. Stir-fry
until sauce is glazed. Serve with cooked rice.
We only had wild rice, which cut down on the effect a little bit but wasn't bad. |
My Rating: 4/5 "Lots of yummy stuff going on in here. It was also good practice for our toddler to eat with his kiddie chopsticks. You can use a fork as well, of course, but where's the fun in that?"
