2 Tbsp. olive oil
1 medium onion, cut into thin wedges
2 stalks celery, sliced
2 medium chicken breasts
2 cups baby carrots (about 8 oz.)
1 cup wild rice, uncooked
½ tsp. dried thyme
½ tsp. garlic powder
½ tsp. salt
1 (32-oz.) carton reduced sodium chicken
broth
2 cups water
Juice of half lemon

Combine all ingredients except lemon juice in slow
cooker.
Cover and cook on HIGH for 3 hours or LOW for 7 hours
or until rice is tender and chicken is cooked through.
Remove chicken and shred; return to pot with lemon
juice. Season soup to taste with salt and pepper.

My Rating: 3/5 "I thought the lemon juice was going to add pizzazz to this, but unfortunately it didn't and the overall effect was quite bland. This is one of those dishes that tastes healthy, like, in a disappointing way. But it's a filling soup, and pleasant in its own way."
