1 pound ground ham
1/3 cup fine dry bread crumbs
1 beaten egg
½ cup milk
1 tablespoon prepared mustard
2 tablespoons sliced green onion
1 1-pound 4 ½-ounce can crushed pineapple,
well drained (1 ½ cups)
1 unbaked 9-inch pastry shell
¼ cup brown sugar
They didn't have ground ham at Walmart (and I'm not sure it's something they sell anywhere these days). I took an immersion blender to diced ham and that did the trick, although it was SUPER messy. |
Thoroughly combine ham, crumbs, egg, milk, mustard,
onion, and ½ cup of the pineapple. Spread in pastry shell. Combine remaining
pineapple and brown sugar; arrange on ham mixture in a spoke pattern.
In retrospect just using a dollop like this would have been cuter. |
Bake in
moderate oven (350F) for 45 minutes.
...because the spokes just look mushy and weird after they're baked. |
Served with potato salad and a nice assortment of fresh fruits and vegetables my dinner guest brought over. |
My Rating: 4/5 "It's hearty without weighing you down, and the overall concept is pretty fun. Ham and pineapple are a classic combination, of course, so you know they're going to go well together. The texture takes some getting used to, but one you're there you're happy."
