½ cup butter or margarine,
softened
1 cup firmly packed brown
sugar
1 egg
½ teaspoon vanilla extract
1 cup mashed bananas
1 ½ cups all-purpose flour
1 teaspoon cinnamon
½ teaspoon baking soda
½ teaspoon salt
1 cup granola
This is the granola I used, which for the record was delightful when I had it for breakfast the next day. |
Grease 2 cookie sheets. In a large bowl cream the butter and sugar with an electric mixer at medium speed. Add the egg, vanilla, and bananas, beating until well blended. Add the flour, cinnamon, baking soda, and salt, and mix until blended. Stir in the granola. Drop by the tablespoon onto the prepared cookie sheets, spacing about 2 inches apart.

Bake in a 375F oven for 12 minutes. Cool on a wire rack.

My Rating: 3/5 "I really, really wanted to like these, both because they seem vaguely healthy and because they have a tenuous connection to Don Knotts. But they're kind of bland and boring, honestly. I think more spices might improve the flavor and more bananas would improve the texture? You're welcome to fiddle with the recipe and see."
