Blueberry Oat Crumble

Good & Gather

4 cups fresh or frozen blueberries

1 cup cane sugar, divided

¾ cup + 2 tbsp. all-purpose flour

2 Tbsp. fresh lemon juice (about ½ lemon)

½ cup oats

½ cup chopped walnuts, if desired

½ tsp. salt

½ tsp. cinnamon

½ cup (1 stick) butter, well softened

Heat oven to 375F. Spray 8-inch square baking dish with nonstick spray. Combine berries, ½ cup sugar, 2 Tbsp. flour and the lemon juice in baking dish.

Blueberries always win points for being photogenic.


Toss lightly to mix; spread evenly.

Stir ½ cup sugar, ¾ cup flour, oats, walnuts, salt, cinnamon and butter in large bowl with fork until blended. Crumble evenly over berry mixture. Bake 30 to 40 minutes until topping is golden brown and filling is bubbling. Serve warm or cool. Refrigerate leftovers.

Crisps, on the other hand, are less obviously attractive. But they TASTE so good!

Served with a delightful pineapple cookie our dinner guest got from the local Mexican bakery.

My Rating: 4/5 "So good - I gobbled it right up. It's crunchy and berry-y. Try it with some ice cream - I bet that's the extra element that would really seal the deal."
