Pillsbury Best of Italian Mexican & Chinese Cooking, p. 75
4 boneless skinless chicken breast halves
2 teaspoons ginger
1/3 cup water
½ teaspoon grated lemon peel
3 tablespoons lemon juice
3 tablespoons honey
2 tablespoons orange juice
2 teaspoons cornstarch
Rub chicken breast halves with ginger. Spray large
nonstick skillet with nonstick cooking spray. Heat over medium-high heat until
hot. Add chicken; cover and cook 8 to 12 minutes or until chicken is
fork-tender and juices run clear, turning once during cooking.
Meanwhile, in small microwave-safe bowl, combine all
remaining ingredients; blend well. Microwave on HIGH for 1 ½ to 2 minutes or
until sauce has thickened.
To serve, spoon sauce over chicken.
Get a nice smoky sear on that chicken. |
If desired, serve
with lemon slices and green onions.
Lemon slices were enough garnish for me - pretty and flavorful. |
My Rating: 4/5 "There are so many nice things in this sauce, so of course it's going to be pleasant! Honestly I enjoyed the leftovers more than I did the initial serving - I think the flavors had more time to mingle and sink into the chicken that way. But either way, it's a mild, happy main dish if you're feeling like poultry."
