Orange Summer Dessert

South Dakota Governors Residence Cookbook, p. 221

½ lb. Ritz crackers, crushed

¼ cup sugar

¼ cup margarine

1 can sweetened condensed milk

1 (6-oz.) can frozen orange juice

2 cans mandarin oranges, drained

1 (8-oz.) container whipped topping

Ready to be CRUSHED.


Mix crackers, sugar, and margarine. Press into a 9 x 13 inch pan. Combine milk and orange juice. Add mandarin oranges and fold in whipped topping. Pour onto crumb crust and sprinkle a few reserved crumbs on top. 

The crust stayed together a lot better than I thought it would.


Refrigerate.

And eat! Don't forget eat!

My Rating: 5/5 "This is amazing. I love that it's made with a cracker crust, because the little dose of salt in there is wonderful. The topping is tart - this isn't an orange fluff salad, it's a nice burst of real orange flavor! Honestly, I'm having a hard time not gobbling up all the leftovers in the fridge by myself right now."
