Strawberry Bread

Avera McKennan School of Radiology Cookbook 2010, p. 24

2 pkg. frozen strawberries

4 eggs, beaten

2 c. sugar

1 c. cooking oil

4 c. flour

1 tsp. baking soda

½ tsp. salt

Putting the strawberries in the bowl was the only part of the process that went well.

Eventually you wind up with a weird mush (see below) and you cram it into loaf pans to see what happens.


Bake at 350F for 50 minutes. Yield: 2 loaves.

And then after all that baking you still have a pan of unredeemable mush.

My Rating: 1/5 "When I read this I thought that the ingredients were in a weird order, but assumed that the author of the recipe knew something about baking that I didn't. They did not. When you dump the eggs over the strawberries they freeze. Everything else comes together in a weird consistency and then you spend so long stirring trying to fix it that you kind of forget who you are. Baking it doesn't help - it stays gloopy all the way through, even mostly at the edges. I love strawberry bread, so this was a long way to fall. I guess the moral is that if you know how to cook, follow your intuition instead of the (lack of) instructions."
