Favorite Family Recipes by Eureka Girl Scouts, p. 4
1 lb. ground beef
1 t. salt
¼ t. pepper
2 T. vegetable oil
1-15 oz. can pineapple tidbits (undrained)
½ cup sweet pickle relish
2 T. soy sauce
1 clove garlic, minced
2 T. cornstarch
1 clove garlic, minced
2 T. cornstarch
¼ c. water
½ green pepper, cut into ¼” slivers
Hot cooked rice
Mix beef with salt and pepper. Shape into 1-inch balls. In skillet with lid, heat oil. Add meatballs and cook, turning or shaking until browned on all sides. Add pineapple and syrup, pickle relish, soy sauce and garlic.

Mix cornstarch and water until smooth, stir in meat mixture. Bring
mixture to boiling, stirring. Boil 1 minute. Stir in green pepper. Reduce heat;
cover and simmer 3-5 minutes. Do not overcook. Pepper should be tender-crisp.
Serve with hot cooked rice.

My Rating: 4/5 "Sometimes that really, really Americanized Asian cuisine hits the spot. I have a fondness for pineapple, so adding that to the meaty ricey foundation of the dish gave this a total package appeal I quite enjoyed. It's not the prettiest when it's plated, but for a weeknight dinner it's still a treat."
