1 box (12 oz.) penne
1 cup fresh green beans, cut into 1-inch
pieces (Frozen thawed may be substituted)
1 can (15 oz.) black beans, drained and
rinsed
1 can (15 oz.) navy or great northern
beans, drained and rinsed
½ cup citrus vinaigrette
½ cup green onions, sliced
¼ cup fresh parsley, chopped
Hooray for green stuff! |
Prepare pasta according to package directions. Cool. In a large bowl combine green beans, black beans and navy beans.
Are green beans actually beans? I feel like they shouldn't be. |
Add pasta,
vinaigrette, green onions and parsley. Toss to blend all ingredients.
Absolutely nothing resembling a citrus vinaigrette at Walmart and I didn't have time to make something from scratch. I made do with Italian dressing. |
My Rating: 3/5 "Pasta salad always has that comforting summer-picnic vibe, which I appreciate. This one, though, has nothing very distinctive about it other than that the beans add a weird texture element. There's not enough dressing on it to add much flavor. I'd love to hear suggestions for improvement."
