Chewy Chocolate Cookies

Guilt-Free Girl Desserts, p. 58

1 ¼ cups all-purpose flour, plus extra for dusting

¼ cup unsweetened cocoa powder

¼ teaspoon baking soda

¼ teaspoon salt

1 cup granulated sugar

6 tablespoons unsalted butter, softened

3 egg whites

1 teaspoon vanilla extract

¼ cup semisweet chocolate chips

Preheat the oven to 350F. Line a cookie sheet with parchment paper.

In a medium bowl, combine the flour, cocoa powder, baking soda and salt.

In a large bowl, use an electric mixer to cream together the sugar and butter until fluffy.

They forgot to mention when to add the dry ingredients, but I'm assuming it's after this step.

Add the egg whites, vanilla extract, and chocolate chips and mix until well combined.

Lightly flour your hands and form rounded tablespoons of dough into balls. Put these onto the prepared cookie sheet, setting them about 2 inches apart.

An ice cream/cookie scoop can do that job just as effectively without you needing to get grimy.

Bake in the preheated oven for 10-12 minutes, or until set.

Transfer the cookies to a wire rack to cool completely before serving.

Tasty chocolate bites!

My Rating: 4/5 "So much chocolately goodness! They were a titch drier than I expected, but the flavor was still rich and delicious. The cookbook claims that they're a healthy alternative dessert; I don't know if I'm willing to go that far, but that assumption did make me feel better about eating them."
