CNA Restaurant’s Peanut Butter Pie

Thought You’d Never Ask, p. 120

9-inch pie shell

Creamy peanut butter

8 ounces instant vanilla pudding mix

Whipped cream

Prebake pie shell; cool.

Spread creamy peanut butter on bottom and sides of pie shell about 1/8-inch thick.

I used to be firmly a Jif person, but lately my loyalties have been roaming.

Spread with either a rubber spatula or the back of a large spoon.

Mix instant vanilla pudding mix according to directions and pour into shell. Allow to set until firm, then top with whipped cream.

It doesn't look like fireworks and rainbows, but it definitely TASTES like them.

My Rating: 5/5 "I can't believe how cheap and easy this recipe is when the payoff in the end is so spectacular. That one little layer of peanut butter flavors the entire thing, while the pudding just kind of sweetens and expands the effect. Please do yourself the favor of making this - if you use lite whipped topping and sugar-free pudding there's absolutely nothing to feel guilty about with this little indulgence."
