Diary Chicken Salad

The Nancy Drew Cookbook, p. 82

2 cans mandarin orange or tangerine sections

¼ cup white, seedless grapes

¼ cup salted almonds

1 banana

2 cups cooked chicken, cut into small cubes

½ cup mayonnaise

18 canned pineapple rings

Drain orange sections. Dry on paper towels. Wash grapes and cut them in half. Chop almonds into small pieces. Peel the banana and slice into thin round pieces.

Combine orange sections, grape halves, chopped almonds, banana slices, and chicken cubes in a bowl. Add mayonnaise and mix well.

I used pre-shredded chicken so the visual effect was a little different.


Put 3 pineapple rings on each guest’s plate, forming a triangle. Pile the chicken salad on top of the pineapple rings.

My Rating: 4/5 "I enjoyed the fruity flavors here and the deli-salad consistency. The chicken was a little confusing - when you bite into a delicious fruit salad you don't expect to have poultry coming at you. But it's not an unpleasant combination and the pineapple rings made a pretty, edible accent to everything."
