Savory Lamb Chops with Mint

¼ cup extra virgin olive oil

1/3 cup chopped fresh mint

4 large garlic cloves, minced

2 tsp. salt

2 tsp. ground cumin

1 tsp. ground coriander

1 tsp. cayenne pepper

1 tsp. finely ground black pepper

8 (1- to 1 ½-inch-thick) lamb loin chops (about 5 ounces each), trimmed

Fresh mint sprigs

Walmart only had pre-seasoned lamb chops, but I washed all of that stuff off and had a nice blank lamb slate.


Place olive oil, chopped fresh mint, minced garlic, salt, cumin, coriander, cayenne pepper, and black pepper in small bowl; mix well. 

So much fun stuff!


Spread herb mixture over both sides of lamb chops. Transfer chops to broiler pan. Let stand 10 minutes.

Preheat broiler. Broil chops until brown and crusty, about 4 minutes per side for medium-rare. Arrange chops on platter, garnish with fresh mint sprigs, and serve.

I forgot the garnish. The dish was pretty enough by itself.

My Rating: 4/5 "Complex flavors with great meaty meatness make this memorable. The seasonings upstage the flavor of the lamb a little, but not in a way that made me feel ripped off. Everything came together well."
